King Oyster Mushrooms with Soy Sauce Glaze on Pak Choy
Serves 4

Ingredients:
- 4 King Oyster Mushrooms, sliced
- 3 tablespoons soy sauce
- 1.5 tablespoons of honey
- 1 teaspoon sesame oil
- 1 teaspoon rice wine vinegar
- 1 teaspoon grated ginger
- dash of salt and pepper
- 1 pack of pak choy
- 1 large shallot, finely diced
- 1 tablespoon red pepper flakes
- 2 cloves of garlic, minced

1) Steam Pak choy until tender and set aside.
2) Combine the soy sauce, honey, sesame oil, rice wine vinegar, ginger, black pepper and set aside.
3) In a fryingt pan over medium/medium-high heat, add vegetable oil and add the red chilli, garlic and shallot until fragrant and the shallots are slightly browned - approximately 2 mins
4) Add pak choy and saute for a minute to warm through and combine all the flavors. Wipe the same pan and vegetable oilmove to a plate and set aside while we cook the mushrooms.
5) Add more oil to frying pad over medium/medium-high heat. Add the sliced king oyster mushrooms and fry for about 2 minutes until golden. Flip over to the other side.
6) Drizzle the glaze over the mushrooms and keep basting the sauce over the mushrooms to thicken the glaze. Another 2 minutes. The mushrooms will be dark and golden in color and slightly sticky from the honey in the glaze.
7) Place steamed pak choy on a plate and top with glazed mushrooms. Serve with noodles or rice.


 

 

Herb Crusted King Oyster Slices

These King Oystermushrooms have been sliced and then delicately crumbed in a mix of fine breadcrumbs and herbs and then lightly fried, the result was that the texture of the mushroom was preserved inside that crisp flavoursome crust but it was also enhanced from the herbs in the crust - delicious for a light lunch served with a dipping sauce or as an accompaniment for steaks and grilled dishes.
